HOPS It grows spontaneously on the banks of watercourses, along the hedges, at the edge of the woods, from the plain up to an altitude of 1,200 meters if the climate is not too windy and humid. Its presence is very common in northern Italy. Hop cultivation in Italy was introduced, starting in 1847, by the agronomist Gaetano Pasqui of Forlì, who also promoted a brewery in operation since the 1960s. Hops are mainly used in the brewing process, where it plays the very important role of giving the most common characteristic to the beer, that is the bitter taste, in addition to the aroma, very pronounced in Pilsner, where the Saaz type of origin is used above all Bohemian. The use of hops also acts as a natural preservative for beer as it has antibacterial properties.
